Abstract

 Turkey has a rich potential of aromatic herbs and spices thanks to its geographical location and climate diversity. Under the influence of Mediterranean, Aegean and Black Sea climates, the country is home to diverse ecosystems that allow different plant species to grow. Aromatic plants have an important place in both traditional culinary culture and the modern food industry. Among Turkey's aromatic plants, thyme, mint, sage, chili peppers and basil stand out. The Southeastern Anatolia region in particular stands out with its rich variety of spices. Spices such as pistachio, sumac and isot are the gastronomic identity of this region. The Aegean region is known for herbs and spices used in olive oil dishes, while the humid climate of the Black Sea region allows for the growth of various green herbs. The cultivation of aromatic plants contributes to local economies and supports rural development. However, the sustainable use of these plants is of great importance for maintaining ecosystem balance. Turkey's aromatic herbs and spices map is considered as a critical resource for both the conservation of biodiversity and the preservation of cultural heritage. In this context, supporting local producers and marketing their products play an important role in increasing the economic value of aromatic plants.  In conclusion, Turkey's rich diversity of aromatic plants and spices offers gastronomic and economic opportunities at both national and international levels. Utilizing this potential is vital for both agricultural sustainability and the protection of cultural heritage.
